Mujadarah (Lentil and Rice with Caramelized Onions)

Palestinian Rice Mujadarah is a beautiful reminder that the simplest ingredients can create the most comforting meals. Made with tender rice, earthy lentils, and simple spices, this humble traditional dish is brought to life with a generous topping of deeply caramelized onions that add sweetness, richness, and incredible flavor.

Every spoonful is hearty, nourishing, and full of the flavors of home. Traditionally served with a refreshing tomato and cucumber salad, plain yogurt, or tangy pickles and cured olives, Mujadarah is the kind of meal that doesn’t need much to feel complete.

Rooted in Palestinian home cooking and passed down through generations, it’s more than just rice and lentils. It’s a taste of our heritage, a celebration of resourceful cooking, and a reminder that some of the most cherished dishes are the ones made with the simplest ingredients and the most love.

Ingredients

  • 3 large onion, sliced
  • 1 cup extra virgin olive oil
  • 1 1/2 cup short grain rice
  • 1 1/2 cup brown lentils
  • 3 cups water
  • 1/4 tsp black pepper
  • 1/4-1/2 tsp cumin
  • 2 tsp salt
  • 1 1/2 cup water

Instructions

  1. Rinse and soak the rice.
Rinse the rice several times until the water runs clear. Soak in lukewarm water for 45 minutes, then drain well.
  2. Caramelize the onions.
Add the sliced onions and olive oil to a large pan. Heat on high until the onions begin to sizzle, then reduce the heat to low-medium. Cook, stirring occasionally to prevent burning, until the onions are deeply golden brown with slightly crispy edges. Reserve about ¼ of the onions, along with approximately 2 tablespoons of the caramelized onions and oil, for finishing the dish. Set aside.
  3. Cook the lentils.
Check the lentils for any small stones or debris, then rinse thoroughly. Place them in a pot with 3 cups of water, ensuring they are covered. Bring to a boil, then cover and reduce the heat to a simmer. Cook for approximately 10 minutes, or until the lentils are tender enough to mash easily between your fingers. Cooking time will vary depending on the type and age of the lentils. Turn off the heat.
  4. Combine the rice and lentils.
Add the drained rice to the pot of cooked lentils. Season with black pepper, cumin, and salt. Add ¼ of the caramelized onions, along with their olive oil, and stir gently to combine.
  5. Cook the mujadara.
Add 1½ cups of water and stir well. Bring the mixture to a gentle boil, then cover and reduce the heat to very low. Cook for 15–18 minutes, stirring only once halfway through to help the rice cook evenly. Avoid stirring too often, as this can make the rice mushy.
  6. Let it rest.
Turn off the heat and leave the pot covered for 10 minutes. This allows the rice to finish steaming and the flavors to settle.
  7. Garnish and serve.
Transfer the mujadara to a serving platter and generously top with the remaining caramelized onions. Serve warm alongside Middle Eastern garden salad, plain yogurt, cured olives, fresh radishes, and pickles.

Serving tip: The secret to delicious mujadara is deeply caramelized onions. Take your time with them to develop their rich sweetness and slightly crispy texture.
