
Nothing could be easier than this Grilled Citrus Soy Salmon with Grilled Asparagus for a midweek dinner or weekend brunch. It takes less than 20 minutes to put together and is packed with nutrients to give you the energy you need to finish the week.
Ingredients
- Salmon fillet About 6-7 pounds
- 1 orange zest and juice
- 1 lemon zest only
- 1/4 cup light soy sauce you can use regular
- 2 tablespoons finely chopped garlic
- 2 springs of fresh rosemary
- 2 bunches of asparagus
- Avocado oil about 3 tablespoons
- Everything bagel seasoning
- Salt and pepper
- 1- rinse the salmon and pat dry, cut salmon fillet into desired pieces
Instructions
- 2- grab a gallon size ziplock bag and it’s literally dumb every thing together. Garlic, orange and lemon zest, soy sauce, orange juice, rosemary, and pepper and give it a whisk. I don’t add salt as soy sauce has enough salt in it. Especially if you are watching your salt intake, but if you would like to, feel free to do so.
- 3- add salmon to the bag, give a good shake to let the sauce cover every piece and leave in the fridge for 1-2 hours to let the flavors develop.
- 4- in the meantime wash the asparagus cut the ends, and place in a baking dish.
- 5- add avocado oil, lemon zest, everything bagel seasoning, lemon zest and salt and pepper I used Rosemary salt.
- 5- place the asparagus in a 400 degree preheated oven, covered loosely with foil. It should take about 15 minutes. Give the baking dish a shake in between to make sure it’s cooked evenly.
- 6- raise the temperature to 450 degrees in your oven. Place the salmon fillets on a parchment paper lined baking tray. And place in the oven on the bottom rack.
- 7- bake for 15 minutes and broil on high for 10 minutes or to your desired doneness.
- 8- I served my salmon and asparagus with mashed potatoes you can also serve with rice. Enjoy!
