Fiesta Chicken Bake

Celebrating Latin Heritage Month with a modern dish inspired by Latin cuisine, not your traditional dish, simple yet complex, colorful and bursting with flavor. I hope you get to try it.

Ingredients

You will need

  • 9×13 deep baking dish
  • 12 corn tortillas fried on both until golden
  • Mozzarella cheese shredded
  • 2 chicken breast
  • 2 bay leaves
  • Fresh thyme
  • 1 garlic clove
  • Salt and pepper corns
  • Vegetable filling
  • 2 tbs avocado or neutral oil
  • 1 medium onion chopped (fine)
  • 4 cloves garlic chopped (fine)
  • 1 red bell pepper chopped (fine)
  • 1 jalapeño chopped (fine)
  • 1 tomatillo chopped (fine)
  • 1 can fire roasted pepper diced green chilies 4 ounce (optional)
  • Red creamy sauce
  • 4 tbs butter
  • 4 tbs flour + 1 tbs chili powder
  • 2 cups reserved chicken broth
  • 1/2 cup sour cream

Instructions

  1. Start by boiling the chicken, make sure to skim the white froth before adding the flavorings. Cover and cook on low until fork tender.
  2. Strain and reserve the broth, shred the chicken.
  3. In a frying pan heat the avocado oil, add the onions and 4 cloves of garlic and sauté on low until onions are almost transparent add the peppers and sauté for 30 seconds then add the tomatillo sprinkle with salt to taste, set aside to cool (drain the roasted chilies and add to mixture it gives a lot of flavor, unfortunately, I didn’t have any on hand).
  4. For the red sauce melt 4 tablespoons of butter, add the flour and chili powder and whisk together until toasted. Add the broth gradually cook while whisking until second remove from the heat add 1/2 cup of sour cream and whisk quickly to have a creamy sauce.
  5. Preheat oven to 375 F. bake.
  6. In a baking dish lightly add some of the sauce to cover the bottom of the dish, line the dish with six fried tortillas. Overlapping spread half of the chicken top it with half of the sautéed vegetables, then top with half of the sauce. sprinkle a lot of mozzarella cheese, then repeat with the rest of the ingredients ending with lots of mozzarella.
