
Whenever I want an ordinary day to feel a little more delicious, Crispy Pan Seared Salmon is the sort of recipe I reach for. A generous salad is one of my favorite ways to let seasonal ingredients do the talking. It is especially handy for days when I want something straightforward without settling for dull.
Ingredients
- .86 ounces Atlantic salmon fillet skin on
- 1 fennel bulb, thinly sliced
- 1-2 grapefruit, segmented
- Black pepper and salt
- Olive oil
- Juice from the grapefruit
- Fresh mint and fennel
Instructions
- Avocado oil to fry the salmon.
- Prepare the salad as you see.
- Sprinkle salt and pepper on both sides of the salmon.
- In a very hot skillet add enough avocado oil to cover the pan. Start with salmon skin down cook until crispy and golden once you get some color lower the heat to medium low, and cook further 3 minutes. Flip and sear on all sides for 30 seconds.
- Serve skin side up next to salad and fries.
