Creamy Garlic and Herb Infused Mashed Potatoes

A dependable main course is worth its weight in gold, especially when family or friends are hungry. This is exactly the sort of recipe that keeps a kitchen feeling alive and well used.

Ingredients

  • 2 lb potatoes
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 3 cloves garlic
  • Herbs: sage, thyme, rosemary ( use what ever you wish)
  • 4 tbsp butter
  • 2 heaping tbsp crème fraîche ( substitute sour cream )
  • 4 shallots thinly sliced + 1/4 cup flour for dusting
  • Vegetable oil for frying
  • Water + salt for boiling
  • Extra salt for seasoning
  • Chives or thyme for garnish

Instructions

  1. I will not give instructions on how to make mashed potatoes because the real is self-explanatory, but I will give pointers 👇🏼.
  2. 1- cut the potatoes in uniform cubes so it would all cook at the same time.
  3. 2- I don’t own a potato ricer, you really don’t need one. I just use a fork or potato masher. I really prefer the fork because I like my potatoes to have texture to them but if you want to use a potato ricer go for it.
  4. 3- don’t let the potatoes overcook, once you can poke with a fork drain immediately.
  5. 4- when heating the milk on low make sure not to overheat only enough to melt 4 tablespoons of butter.
  6. 5- when you pour the heated milk on top of the potatoes, you will think it’s too much but trust me potatoes absorb all the liquids!! and you will not need to add more milk when reheating, all because of crème fraîche my (secret ingredient ).
