Citrus Miso Salmon Bowl

Great for lunch or dinner, and so easy to make when you’re out of ideas. It’s rich with omegas and whichever daily vegetables you choose. I chose mushrooms and shishito peppers, which I absolutely love, but you can also use steamed vegetables if you wish.

Ingredients

  • 1 lb salmon cubed
  • 2 tbs mayonnaise
  • 2 tbs light soy sauce
  • 2 cloves garlic minced
  • Zest of one lemon
  • 1 tsp light miso paste
  • 2 tbs water
  • 1 tbs lemon juice
  • Avocado oil
  • Mushrooms, shishito peppers
  • Everything but the bagel seasoning
  • Green onions, sriracha

Instructions

  1. Start by mixing your sauce (2 tablespoons of mayonnaise, soy sauce, 2 cloves of garlic, lemon zest, miso paste, water and lemon juice) and set aside.
  2. To a frying pan add enough avocado oil to cover the surface, fry the cubed salmon in batches making sure not to over crowd and to cook all the way through ( the center should still be pink ) notice I haven’t used any salt because all the flavor is in the sauce.
  3. Discard of the sauce and wipe the pan clean, add the sauce to the hot pan it will bubble right away. Add the salmon back give it a couple of shakes just to get coated, set aside in a plate and keep warm.
  4. Sauté your vegetables each with 1 tbs of avocado oil, I like to add everything thing but the bagel to shishito peppers.
  5. Make your bowl using steamed rice top it with green onions, sriracha and everything but the bagel enjoy 😊.
