Cheesy Squash and Meat Boats

Cheesy white squash meat boats are a great lunch idea, packed with protein and so easy to make. I hope you get to try it, and don’t forget to like and follow for more!

Ingredients

  • 3 white/Mexican squash
  • 8 ounces ground beef or any meat you like
  • Spices measure by heart:
  • Cinnamon
  • Paprika
  • Chili lime
  • Black pepper
  • Mexican oregano
  • Salt
  • The inside of the squash chopped
  • Green onions, sliced
  • Shredded cheese, Jack and cheddar
  • Avocado oil spray, to spray the baking pan

Instructions

  1. In a pan cook the meat with no oil add the spices mentioned on top, a little bit of this and a little bit of that! Stir well and cook until no longer pink set aside.
  2. In the meantime wash the squash making sure to remove any dirt and trim the bottom, cut lengthwise bring a pot of water to boil. Drop the white squash in, cover and cook for 5 minutes.
  3. Remove the squash from the pot and let cool, scoop out the flesh from the squash carefully and pat dry from any excess water. Chop the scooped inside add to the meat mixture along with the green onions and cheese.
  4. Spray a baking pan with the oil arrange the squash and fill with the meat filling top with extra cheese and sprinkle with paprika.
  5. Bake in a 375 F. Preheated oven for 12-15 minutes or until the cheese is melted. Enjoy.
