
Every cook needs a few recipes that make the table feel cared for, and Caramel Apple is a delicious place to begin. I would set this in the middle of the table and let everyone help themselves. Give it the time it needs, then enjoy the pleasure of sharing it with someone you love.
Ingredients
- 8-9 cold apples🍎🍏 (preferably green)
- 1 3/4 cups heavy cream
- 2 cups packed brown sugar (light or dark)
- 1 cup light corn syrup
- 4 tbs unsalted butter
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- Toppings:
- Mini M&M, Oreo thins, peanuts, coconuts, graham crackers or melted chocolate
- Needed:
- Heavy bottom pot, silpat or wax paper, apple sticks, thermometer
Instructions
- Store bought apples are normally waxy in order to remove the wax you will need to place in hot water wash will and then wipe clean with a cloth. Remove the stem and insert a Carmel apple stick 3/4 of the way, this step will be a bit tedious! I only found candy sticks so I had to poke the apple with a skewer to make sure the stick got all the way through.
- Start on the caramel: add all the ingredients to a 4 quart pot and cook gently while stirring with a wooden spoon until 4 tablespoons of butter is melted and 2 cups of sugar is dissolved, stop stirring and let it come to a gentle boil, insert the thermometer making sure the bulb doesn’t hit the bottom so you can get an accurate reading. The caramel needs to reach 240F. It took about 30 minutes!
- Remove from the heat and let cool for 10-15 minutes. Dip the apple in the caramel tilting the pot as needed, swirl to get rid of extra caramel ( I scraped the bottom of the apple against the pot) dip in your favorite topping place in the fridge to cool completely before enjoying.
- If you have extra caramel fold in any extra toppings and spread on wax paper let cool completely and cut into soft caramel (always keep in the fridge).
