
I love this Caesar Salad, so creamy, delicious, and easy to make. It’s my go-to recipe when I’m looking for a quick dressing that’s done in just a few minutes. And I promise you won’t miss the raw eggs or the anchovies.
Ingredients
- 🥬 6 cloves garlic
- 🥬 1 cup mayonnaise with avocado oil
- 🥬 2 teaspoons Dijon mustard
- 🥬 1/2 teaspoon ground mustard
- 🥬 2 tablespoons rice vinegar or white wine vinegar
- 🥬 2 teaspoons Worcestershire sauce
- 🥬 1/2 cup Romano cheese or Parmesan, shredded or grated
- 🥬 1/4 cup olive oil
- 🥬 1/2 tsp fresh ground black pepper
- 🥬 1 teaspoon lemon juice optional
Instructions
- 1- in a food processor, process 6 cloves of garlic until minced. Add the mayonnaise, mustard, 1/2 teaspoon of ground mustard and vinegar and process again.
- 2- add the Romano cheese, and 2 teaspoons of worcestershire sauce and process again.
- 3- while the processor is running add 1/4 cup of olive oil slowly until the dressing reaches your desired consistency.
- 4- give it a taste. I decided to add 1 teaspoon of lemon juice for extra acidity. It’s absolutely up to you, add cracked black pepper and pulse again.
- 4- Enjoy with home made croutons and extra shredded Romano cheese.
- P. S. Don’t be surprised if you have a lot of dressing. I stored the rest in an airtight jar in the fridge, it would last for a week if you don’t keep reaching for it 😉.
