A Large Bowl

Long ago I stopped saving good recipes only for company, so A Large Bowl is welcome at my table any day of the week. This is the kind of centerpiece that makes dinner feel complete without needing a crowded menu. There is something comforting about letting the oven take over while the table comes together.

Ingredients

  • 1 15oz can corn, drained
  • 1 15oz can cream-style corn
  • 2 eggs
  • 1 cup sour cream
  • 4 tbs butter, melted
  • 2 tbs honey
  • 1/2 cup finely ground cornmeal
  • 3/4 cup all purpose flour
  • 1 tbs baking powder
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350F.
  2. In a large bowl add all the wet ingredients and whisk.
  3. Add the dry ingredients and whisk well.
  4. Butter a 2 quart casserole.
  5. Spread half of the batter then sprinkle half the cheese, spread the rest of the batter then top with the rest of the cheese.
  6. Bake for 35-40 minutes once you see the edges starting to get some color and cornbread is set.
