
Long ago I stopped saving good recipes only for company, so A Large Bowl is welcome at my table any day of the week. This is the kind of centerpiece that makes dinner feel complete without needing a crowded menu. There is something comforting about letting the oven take over while the table comes together.
Ingredients
- 1 15oz can corn, drained
- 1 15oz can cream-style corn
- 2 eggs
- 1 cup sour cream
- 4 tbs butter, melted
- 2 tbs honey
- 1/2 cup finely ground cornmeal
- 3/4 cup all purpose flour
- 1 tbs baking powder
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350F.
- In a large bowl add all the wet ingredients and whisk.
- Add the dry ingredients and whisk well.
- Butter a 2 quart casserole.
- Spread half of the batter then sprinkle half the cheese, spread the rest of the batter then top with the rest of the cheese.
- Bake for 35-40 minutes once you see the edges starting to get some color and cornbread is set.
