This is my Almaseieh ألماسية.

Ingredients

Milk Layer

  • 🍊 3 cups whole milk
  • 🍊 1/3 cup sugar
  • 🍊 3 heaping tbsp cornstarch
  • 🍊 1/2 of 170ml can of ashta (middle eastern clotted cream)
  • 🍊 3 caps of orange blossom water

Blood Orange Layer

  • 🍊 2 cups fresh blood orange juice
  • 🍊 2 heaping tbsp cornstarch
  • 🍊 3 tbsp sugar

Topping

  • 🍊 chopped pistachio and dried rose buds

Instructions

  1. Introducing Almaseieh ألماسية which literally translates to diamond like! A dessert typically made in Palestine with layers of thickened milk and thickened fresh orange 2 cups of juice. My take on it was to use blood orange since it’s in season right now and let me tell you it’s a game changer. It’s floral, tart and subtly sweet notes really compliment and balance the milk layer. I decided to also use ashta (or kashta) which is a middle eastern clotted cream. It can be found in middle eastern or international grocery stores and it adds a beautiful smoothness and silkiness to the milk layer. I hope you enjoy this dessert as much as I do and may it bring brightness to you just like a diamond 💎.
  2. For the milk layer, mix the milk, sugar, and cornstarch in a saucepan while cold then place on stove over medium heat. Keep stirring until it gets close to thickening. As it becomes thicker, add orange blossom water and mix in the half can of ashta until well combined. Ladle the mixture into a single serving dessert glass and fill 2/3. Let cool on the counter while making the second layer.
  3. For the blood orange layer, mix everything together in a saucepan while cold then place on a stove over medium heat. Continuously stir until thickened but spreadable. Using a spoon, spread it over the milk layer and fill 1/3.
  4. Let cool in the fridge for ~4 hours. Top with pistachios and rose petals if desired and just like that you have a beautiful delicate dessert!
