
Molokhia ملوخية is a wonderful, soupy green dish that originated in ancient Egypt and is enjoyed throughout North Africa, the Levant, and the Eastern Mediterranean. If you know, you know. It’s made from the leaves of a plant commonly known in English as jute mallow. I love this dish so much, I could eat it every week and never get tired of it. It’s flavored with lots of garlic and lemon and served alongside rice and stuffed or roasted chicken. If you’re not familiar with this dish, I hope you’ll give my Palestinian version a try. It’s so satisfying, nourishing, and comforting! This is part two in the molokhia series.
Ingredients
- 🌿 2 liters of water
- 🌿 2 tablets chicken bouillon
- 🌿 1 tbsp dried chopped onion
- 🌿 18 oz finely chopped molokhia frozen. I use freshly picked leaves that I home preserve and keep on hand in the freezer but you can easily find it already prepared in the frozen section of Middle Eastern or international supermarkets. Look for the brand Montana
- 🌿 ~1/2 cup chicken broth or drippings from roasted chicken (watch part 1 reel of this series)
- 🌿 10 cloves garlic finely chopped
- 🌿 1 tbsp ground coriander
- 🌿 1 tbsp ghee (substitute vegetable oil)
- 🌿 Salt to taste
Instructions
- In a medium sized pot, bring water to a boil and add onion, bouillon and a bit of a salt.
- Add molokhia to the water and let cook over medium heat uncovered while stirring occasionally. You will notice some froth forming. Make sure to remove with a spoon or ladle.
- Once froth is removed, turn down the heat to low and add drippings from a roasted chicken pan, mix, and continue cooking for a few more minutes.
- In the meantime, fry your garlic in 1 tablespoon of ghee and 1 tablespoon of ground coriander until golden.
- Grab a ladle of your molokhia while it’s simmering and add it the garlic pan. You should hear a nice sizzle! Immediately after, add the garlic and molokhia mixture back into the pot.
- Let it boil for a few more minutes to let all the flavors come together. Taste for salt and turn off the heat and cover.
- Serve next to rice, lemon juice, and chicken and enjoy!
