Ingredients
- Olive oil
- 1 medium onion chopped
- 3 cloves garlic chopped
- 1 1/2 Serrano chilli chopped with seeds
- 1/2 yellow or orange bell pepper chopped
- 3 tomatoes peeled and chopped
- 1 tsp tomato paste
- 4 eggs
- Salt & pepper
Instructions
- Start by adding olive oil to a 12 inch frying pan preferably none stick. Add the onions and a dash of salt, sauté until translucent, add the peppers and 3 cloves of garlic and sauté on medium heat until tender add 3 tomatoes, some black pepper and salt and let cook down. Add 1 teaspoon of tomato paste stir well until combined about a minute, add extra olive oil crack the eggs and cover. Cook on low to the level you want your eggs cooked. Garnish with sumac and parsley.
