
This pasta dish is a favorite in my household, and my go to when I can’t think of what to make for dinner. It’s a one pot meal (don’t we all love that), super creamy and delicious. I hope you get to try it, and don’t forget to tag and share ☺️
Ingredients
- 4 boneless chicken breast ( 2 lb 10 ounce )
- 4 ounce butter + 4 ounce olive oil
- 1 whole head of garlic peeled and sliced about (15 cloves )
- 8 sun dried tomatoes packed in oil ( sliced )
- 1 1/2 tbs dried basil
- 1/4 – 1/2 tsp dried chili
- Salt & pepper
- 1 pint heavy cream
- 13 ounce Farfalla pasta or Penne
- 1/3 cup water + 1/3 cup pasta water
Instructions
- Pat 4 chicken breasts dry and slice into strips.
- Melt the butter and olive oil on medium heat until it almost bubbles, add the chicken in a single layer making sure not to crowd and brown on both sides.
- Add salt, black pepper, 1 1/2 tablespoons of basil, 1/4 – 1/2 teaspoons of chili pepper, garlic and sun dried tomatoes. Stir around to mix well.
- Add 1/3 cup of water and cover, cook on low until chicken is tender. Uncover, add heavy cream and taste for salt, adjust seasoning and turn of the heat.
- Boil the pasta according to package, reserve 1 cup of pasta water.
- Turn the heat back on for the chicken add the 1/3 cup pasta water. Stir until incorporated and you have a silky smooth sauce, add the pasta and cook together for a couple of minutes. Serve and enjoy!
