Banana Chocolate Chip Muffins

When I am deciding whether a recipe is worth keeping, I ask if I would gladly serve it again; with Banana Chocolate Chip Muffins, the answer is yes. I like to let a main dish take center stage and keep everything around it relaxed. Once it is in the oven, the kitchen begins to do that wonderful work of building anticipation.

Ingredients

  • 5 tbs unsalted melted butter cooled slightly
  • 1 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 ripe medium bananas mashed
  • 1 large egg
  • 1/2 tsp vanilla
  • 3/4 cup chocolate chip

Instructions

  1. This season is about baking, so tie in your apron and let’s start 🤗 you will not find an easier more satisfying recipe than this muffin recipe, great for Sunday mornings. It’s a fun activity for your children to start them in the kitchen, it incorporates math by helping you measure and they will be so proud with the final product.
  2. Preheat oven to 350 F bake.
  3. In a large bowl mix the dry ingredients together flour, 1/2 cup of brown sugar, 1 teaspoon of baking powder and 1 teaspoon of baking soda.
  4. In a separate bowl mix mashed bananas, melted butter, 1/2 teaspoon of vanilla and 1 egg.
  5. Add the banana mixture to the dry ingredients and stir with a fork, don’t over mix.
  6. Add 3/4 cup of chocolate chip and stir enough to combine.
  7. Line a muffin pan with paper liners (12 medium liners) I used 7 large baking cups.
  8. Fill each liner 3/4 full, bake on bottom shelf for 20-25 minutes let cool and enjoy.
