Pantry Vegetable Marinara Pasta

I don’t know about you, but I’ve been craving pasta a lot lately. Could be the weather 🤷🏻‍♀️ This pasta came together in 15 minutes with ready ingredients we all have in the pantry. Don’t you just love simple things that are so satisfying? It’s cooked in one pot with no need to cover, so delicious and easy for a busy day or an evening when you don’t feel like going out. Great for Ramadan too.

Ingredients

  • 12 ounce Penne pasta
  • 1 can artichoke hearts (drained)
  • 3 shallots sliced
  • 8-10 sun dried tomatoes packed in oil sliced
  • 2 hand full baby spinach
  • 1 jar ( 23 oz ) marinara sauce
  • Burrata cheese

Instructions

  1. Boil your pasta of choice according to package.
  2. Heat the sun dried tomatoes for a few seconds using the oil it came in, add 3 shallots, salt and pepper, sauté for a minute add the drained artichoke cook for 30 seconds then add the spinach sauté until wilted, add the pasta and stir everything together top it with the jar of sauce + 1/2 cup water to rinse the pasta jar so we don’t loose any of that good sauce. Let it heat through until bubbly top with the cheese and push in the sauce, let it melt. Drizzled with extra-virgin olive oil, top with basil leaves and enjoy.
