
Warning ⚠️ this is a messy sandwich, but highly addictive. It’s all about the egg this week, and who doesn’t love their eggs in the morning? If you’re a Californian, or have ever been, I highly recommend visiting Eggslut, a place specializing in egg sandwiches, the best in my opinion, so creamy and delicious. Since I don’t have one close by, I decided to make my own.

- In the meantime prepare your sriracha mayonnaise Spread by adding 3:1 mayonnaise to sriracha and set aside in the fridge.
- Once the onions reach a golden caramel color add 1/4 cup water and cook on low until it evaporates, set aside.
- Crack 3 eggs add 1 tsp sriracha and whisk well, In the same cooled pan give it a good wipe add the eggs and 1 tbs butter and cook on low making sure to stir with a spatula continuously lifting from the heat but keeping it close to the flame until your eggs are cooked to a creamy consistency add chives and give it one last stir away from the heat.
- Assemble: toast a brioche bun on both sides add the mayo sriracha spread add 1/2 of the cooked eggs top with caramelized onions 1 slice American cheese (@eggslut they use cheddar but I prefer American) add the rest of the eggs and the other half of the bun. Enjoy.
