
Not every recipe needs a grand occasion, but Pumpkin Cloud Pancakes has a way of making the meal feel like one. I like to let a main dish take center stage and keep everything around it relaxed. This is one to make, share, and tuck safely into the recipe box for another day.
Ingredients
- 1 cup flour
- 3/4 teaspoon cinnamon ground
- 3/4 teaspoon pumpkin spice
- 3 tablespoon brown sugar
- 1/3 cup pumpkin purée (not the pie kind)
- 1 egg
- 1/2 cup milk + 1 tablespoon
- 2 tablespoon melted butter
Pumpkin spice whipping cream
- 1/2 cup heavy cream, 1/2 tsp. Pumpkin spice, 2 tsp. Sugar
Instructions
- We are In pumpkin season and what could better than waking up to the smell of these airy delicious pancake, your whole house will smell of the season 🍂🍁.
- In a bowl whisk the dry ingredients, then add your wet ingredients and mix well. In a hot skillet add a 1/3 cup at a time spread with a spoon (the batter will be on the thicker side).
- Cook on a medium to low heat.
- It will make a stack of 7 pancakes 🥞 I like to brush with butter between the pancakes, enjoy with warm maple syrup and pumpkin spice whipping cream.
Notes
- Depending on your flour and where you live if the batter is too thick add 1 tbs. Milk at a time.
