Ingredients
- Pomelo (sectioned and torn to pieces)
- Romaine lettuce
- Corn
- Pomegranate seeds
- Mushroom (dipped in lemon juice so it doesn’t brown)
- Feta cheese (optional)
Dressing
- 1/2 cup yogurt
- 1/2 cup mayonnaise
- 3 tbs. Honey
- 2 tbs. White vinegar
- 1 tbs. Lemon juice
- 1/2 tsp. Yellow mustard
- 2 tbs. Heavy cream
- 2 tbs. Olive oil
- A pinch of dried parsley
- Salt and black pepper to taste
Instructions
- For the dressing whisk the ingredients together and let stand for 15 minutes to develop the flavor.
- Keep the dressing in an airtight jar it’s perfect on anything your heart desire.
- I keep 1/4 of the dressing in the bowl to mix with the lettuce before assembling, then drizzle as you wish.
- Always wash your greens thoroughly and spin to remove excess moisture, you’re salad will taste much better and the dressing will stick to it.
