
This dessert is so delicious, light and airy, with a custard filling and fresh plums, you can’t stop making it. Don’t forget to save and share!
Ingredients
For the crust
- 250g flour
- 30g powder sugar
- Pinch of salt
- 120g cold unsalted butter
- 1 egg
- 1-2 tbs ice water
For the filling
- 300g farmers cheese or ricotta
- 200g sour cream
- 3 eggs
- 120g powder sugar
- 1 tsp vanilla extract
- 30g cornstarch
- 350g Italian plum
Instructions
- To a bowl add the dry ingredients and stir, cover the cold butter with flour before shredding now rub the flour and butter between your hands until small beads form. Add 1 egg and stir in with a fork enough to combine. Add 1 tbs of cold water and work it gently into the dough I needed one more tablespoon, you need to work the crust enough to come together.
- Gather the dough into a disc and cover with a plastic wrap. Let rest in the fridge for 30 minutes.
- Preheat oven to 370F / 180C.
- Cut the fruit in half and remove the stone.
- To make the filling/custard whisk everything together until smooth except for 30 g of cornstarch I like to add it last.
- Roll out the dough to fit a 24cm pie dish. With a knife clean the edges.
- Pour the filling the arrange the fruits on top.
- Bake for 40-45 minutes or until the custard is firm.
- Let cool completely before serving. Dust with powder sugar and enjoy.
