Quince Jam

I have cooked enough family dinners to recognize a recipe people will ask for again, and Quince Jam has that quality. I love the quiet satisfaction of filling a jar now and enjoying it little by little later. Tuck the jar into the refrigerator and enjoy the pleasure of having it ready when you need it.

Ingredients

  • 1 kilo quinces, peeled, cored and cut
  • 3 cups sugar
  • 2 cups water
  • 1 tsp citric acid

Instructions

  1. Bring sugar, 2 cups of water and 1 teaspoon of citric acid to a gentle boil. Add the quinces, stir well so it’s coated with the sugar syrup.
  2. The quinces will start going down as they cook, you will notice white foam forming remove that!
  3. Cook until it becomes tender yet still holding its shape, you will notice the color changing into this beautiful fall hue.
  4. Once cooled completely, preserve in airtight jars and keep in the fridge. It will last for a year.
