
I actually filmed this recipe four times over three years because I was never quite satisfied with the footage, and ended up using clips from all of them 😬.
Ingredients
- 5-5 lb small white squash ~ koosa
- 4 cups full fat middle eastern yogurt, room temperature +2 tbs cornstarch +1.5 cup water
Meat filling ~حشوة
- 1/2 cup pine nuts
- 750 g course ground beef
- 1 large onion, chopped fine
- 1 tbs seven spice
- 1 tsp cinnamon
- 1/2 tsp black pepper
- 1/4 tsp cardamom
- Neutral oil for frying
- 10 cups water for cooking +1/2 tbs. Salt
Instructions
- Wash koosa thoroughly with cold water from any dirt, trim both ends and scrape gently from any impurities, core from the inside using a corer (you can find on Amazon or any middle eastern market).
- Save the inside of the koosa, I will be showing how to use it! Never waste.
- Prepare the filling, in a pan add 2 tablespoon olive oil fry the pine nuts until golden, stirring all the time so it doesn’t burn. Remove from the pan and set aside, add 1 chopped onion with the a bit of salt cook in the reserved oil until translucent, add the meat along with the spices and stir well cover and let cook on medium-low until no longer pink, uncover and cook until all the juices evaporate, adjust the salt and stir in the pine nuts. Let cool.
- Stuff the koosa 3/4 of the way.
