
Mutawam Koosa is a comforting dish I enjoy making room for at my table.

- Place (naqr al koosa) the reserved inside of the squash in a pot and cover, cook on low stirring occasionally. The koosa will release its own juices and cook in them, once soft uncover and cook to evaporate most of the liquid. Let cool.
- In your serving dish smash 3 garlic cloves with a bit of salt add the cooked squash + 1 tbs. Tahini and 2-3 tbs. Heaping full fat middle eastern yogurt + crushed dried mint + juice from half a lemon. I find the best way is to use your hand to mix everything well so everything is incorporated.
- Adjust your salt and add citric acid when needed don’t add any more lemon juice. Top with fresh mint and drizzle generously with olive oil. Serve next to pita bread.
