Sweet Spiced Wheat with Nuts

I am always happiest when a recipe feels generous and approachable, which is exactly what draws me to Sweet Spiced Wheat with Nuts. This is the sort of sweet I enjoy with coffee, good conversation, and no particular rush. I hope you enjoy both the making and the sharing of it.

Ingredients

  • 1 cup peeled wheat
  • 4 cups water + 1 cup
  • 1 tablespoon anise, ground
  • 1 tablespoon fennel, ground
  • 1/2 tablespoon cinnamon, ground
  • 1 cup sugar or to your liking
  • 2 tbs orange blossom water or to your liking
  • 2 tbs rose water or to your liking
  • For the toppings blanched almonds, plumped golden raisins, descanted coconut and candied fennel

Instructions

  1. Check the wheat for any stones then soak in cold water for 12 hours, rinse the wheat with cold water then place in a pot and cover with 4 cups of water, bring to a boil and skim the white froth. Let cook on low for 45-60 minutes (depending on the amount) until it’s soft.
  2. Check the water level you can add one cup of hot water at a time, once cooked it needs to have enough liquid on it because wheat will absorb the liquid once cooled.
  3. Add the spices and sugar and cook for 5 minutes to develop flavor add rose water and orange blossom water last.
  4. You can serve in one dish or individual cups top with the toppings and enjoy warm or cold. I personally prefer it warm.
