Caramelized Onion, Brie & Pear Baguette

Sweet, slowly caramelized onions blended into a creamy Brie spread, layered with juicy pear, crunchy walnuts, and nutty Gruyère, then baked until golden and bubbly. Finished with fresh chives and a drizzle of honey, this baguette is the perfect balance of sweet, savory, creamy, and crunchy.

IMPORTANT: Save half of the caramelized onion and Brie spread for the next recipe! Trust me, you’re going to want to try it.

I made half of the baguette with pear because caramelized onions and pear are one of my all-time favorite combinations. The other half is pear-free because my husband prefers it that way. Both are delicious, so feel free to make yours however you like!

Ingredients

  • 1 large baguette
  • 3 large onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 5 sprigs fresh thyme
  • 8 ounces Brie cheese
  • 4 ounces cream cheese
  • Salt and freshly cracked black pepper, to taste
  • 1 pear, thinly sliced
  • Walnuts, roughly chopped or crushed
  • Gruyère cheese, freshly grated
  • Fresh chives, finely chopped
  • Honey, for drizzling

Instructions

1. Caramelize the onions

Melt the butter in a large skillet over low heat. Add the sliced onions and thyme sprigs, then cook for 35–40 minutes, stirring occasionally, until the onions are soft, golden, and naturally sweet. They don’t need to be dark brown; the goal is a beautiful golden color with plenty of flavor.

Patience is key here! The onions will release their natural sugars as they cook, creating that delicious caramelized flavor. If they begin to look dry or stick to the pan, add 2 tablespoons of water at a time and continue cooking until tender and golden.

Remove the thyme sprigs and set the onions aside to cool slightly.

2. Make the Brie and caramelized onion spread

Trim the rind from the top and bottom of the Brie, leaving the sides intact if desired. Cut the Brie into smaller pieces and add it to a food processor along with the cream cheese. Process until smooth and creamy, scraping down the sides as needed.

Add the cooled caramelized onions, salt, and freshly cracked black pepper. Pulse until everything is combined, but leave a little texture from the onions. You want a creamy spread with delicious bits of caramelized onion throughout.

3. Assemble the baguette

Preheat the oven to 350°F (175°C).

Slice the baguette lengthwise and place both halves on a parchment-lined baking sheet, cut side up.

Spread half of the Brie and caramelized onion mixture evenly over the baguette halves. Transfer the remaining half of the spread to an airtight container and refrigerate it for the upcoming recipe.

Top with thinly sliced pear, crushed walnuts, and a generous amount of freshly grated Gruyère. If you prefer your baguette without pear, simply leave it off that portion.

4. Bake until golden and bubbly

Place the baguette on the middle rack of the oven and bake until the cheese is melted, bubbly, and lightly golden. This typically takes about 10–15 minutes, depending on your oven and the thickness of the baguette.

5. Garnish and serve

Remove from the oven and sprinkle with freshly chopped chives. Finish with a generous drizzle of honey to bring all those sweet and savory flavors together.

Slice into pieces and serve immediately while the cheese is warm and melty.

A little tip: Don’t skip the honey! Its sweetness complements the savory Brie, rich caramelized onions, juicy pear, and toasted walnuts beautifully.
