This Russian beetroot salad is a beautiful combination of earthy, sweet, and creamy flavors with just the right amount of crunch. It’s made with simple ingredients, yet every bite is full of flavor. The creamy dressing perfectly complements the beets without making the salad feel too heavy. But the little twist that makes this version extra special? Chopped dates! Their natural sweetness pairs beautifully with the earthy beets and crunchy nuts, adding a delicious contrast that takes this classic salad to another level.

Ingredients
- 3 medium beets
- ¼ cup mayonnaise
- ¼ cup sour cream
- ¼ cup walnuts or pecans, roughly chopped
- 2 dates, pitted and chopped
- 2 tablespoons chopped parsley
- Salt and black pepper, to taste
- Extra parsley and chopped pecans, for garnish
Instructions
- Cook the beets: Wash the beets thoroughly to remove any dirt. Place them in a pot, cover with water, and bring to a boil. Reduce the heat to a simmer and cook until a knife slides easily into the beets.
- Cool and prepare: Drain the beets and let them cool completely. Peel and grate them once cool.
- Make the salad: In a large bowl, combine the grated beets, mayonnaise, sour cream, chopped nuts, dates, and parsley. Season with salt and black pepper to taste.
- Mix and serve: Stir everything together until well combined. Garnish with extra parsley and chopped pecans, if desired.
