
My recipe box will always have room for food that feels thoughtful and inviting, and Chicken Artichoke Orzo One Pan Dinner earns its place. I would set this in the middle of the table and let everyone help themselves. I am always grateful for a one-pan recipe that keeps both dinner and cleanup manageable.
Ingredients
- 2 tbs butter
- 1 tbs olive oil
- 4 leeks, chopped
- 1/2 shallot, chopped fine
- 2 cloves garlic, chopped fine
- 2 chicken breast, cubed
- Salt and pepper to taste
Instructions
- Dry basil.
- 1 can artichoke (14 ounce) drained.
- 1 1/2 cup orzo.
- 2 cups chicken broth.
- 1 tbs lemon juice.
- Parsley.
- Melt 2 tablespoons of butter with 1 tablespoon of olive oil, add 4 leeks and cook until almost soft add the shallots and cook for 30 seconds. Make a well in the middle, add the chicken salt and pepper cook on both sides until no longer pink.
- Sprinkle dry basil to your liking then add 2 cloves of garlic, stir every thing together always cooking on medium heat. Add the orzo and cook until coated with the flavors and a bit toasted, add the drained artichoke ( I always keep 1 tablespoon of artichoke pickling juice).
- Give the pot a good stir then add the broth + lemon juice, let come to a boil then cover and cook on low until the liquid is almost absorbed uncover add the parsley then cover again to rest. Absolutely delicious.
Notes
- Make it your own add ingredients to your liking like sun dried tomatoes, olives, capers you can also top with Parmesan if you like.
